Hi Collin,
Seems you missed some helpful threads here (it is easy to get overwhelmed by the sheer amount).
To make it clear: neither do I have a IP4K nor a Nintendo Switch. So I just can give advice from what I found while looking up your problem on the internet.
It seems the Switch got a problem with EDID handshake. That's when two devices talk about their capabilities and change to the best common settings for video signal transfer.
There are several standards and if they do not match you get no signal. Unfortunately I haven't found the specifics of the Nintendo Switch capabilities.
There are two standards for the framerate in NTSC: 1080p60Hz and 1080p59.94Hz
And there are two different color spaces: YUV and RGB
The IP4K does support all of those.
Set the IP4K to 1080p60 for INPUT and OUTPUT.
Make sure you are plugging the Nintendo Switch to the INPUT of the capture card.
Try connecting in this order:
Has to be done in this order (start with nothing plugged into the dock)
Plug in USB-C power adapter.
Plug in HDMI to Dock.
Plug in HDMI to TV.
Put Switch in the Dock.
Turn on TV and select input.

If that does not give a signal, try the same again with IP4K set to 1080p59.94 for IN and OUT
If that does not work, your best bet might be an external HDMI splitter with EDID management, like it had been recommended in this thread:
