I doubt a single system would be able to handle that many at once as I doubt there's enough bandwidth to cope with 7 different uncompressed streams. But if it did work it would be more likely to work on an X79 with an Ivy bridge-E CPU or a dual Xeon than on a Z87 board as it has more bus lanes to cope with data transfer, although I still think you'd have issues when it came to 7 uncompressed streams as that's well over 800MB/s worth of raw data. being fed in and converted on the fly.
Are you just wanting to feed the images in then straight out to wirecast or are you mixing them? If the former then you could just get a couple of systems as it doesn't matter. If the latter then you may want to look at the Atem's
