How to digitize avi v210 uncompressed on a Mac?

I´m involved in a video art preservation program where the standard for archiving all digitized material has been set to avi v210. We´re going to digitize a wide range of analogue and digital formats in both PAL and NTSC. My video dealer convinced me that the Blackmagicdesign Intensity Extreme was the way to go, so I bought the nice and slick looking thing. Been up and down the manual and done my googleing, but still not sure which setting to go for.
What capture preset in FinalCut Pro 7.0.3 should I use? Any other software that works better?
Any important basics I´m missing out on here? The idea is obviously to get the best quality when we digitize and not have to recompress to avi v210...
