Recording without impact many screens

we are a trading company and have many workstations used for trading where each workstation has 6x 4k screens. We want to record all the screens but we don't want to impact the performance of trading workstations. What kind of setup / product you would recommend?
The preferred way for us would be to be able to record as many screens as possible centrally. So in ideal world let's say if we have 10 trading workstations with 6 screens each it would be perfect to have some central device / workstation into which we would plug in all 60 screens and record them (without impact of source workstation). I assume that this would not be possible? But if you can provide some guidelines what setup would be the most close to the above requirement (even though if we need to have more recording stations) it would be much appreciated.
