Best Color Format for 8mm video capture

I've been experimenting with recording 8mm video to ProRes 422 using OBS.

On the advanced tab there I can select different Color Formats such as i420 and NV12.
Can someone explain which is better for preserving S-video color information and why?

OBS can not record prores, only H264 variants or MKV

Regarding OBS support for ProRes

I am running OBS Studio 29.0.2 on MacOS Ventura.
In Settings->Output->Recording using Type "Custom Output(FFmpeg) and container format mov the folowing video encoders are available:
prores, prores_aw, prores_ks, and prores_videotoolbox.

I am currently using the prores encoder.

Note: With Type set to "Standard" the following encoders are available (but don't output a file and will not stop recording) :
ProRes 422, ProRes 422 LT, ProRes 422 Proxy, and ProRes 422 HQ

Is it not as simple as > you're adapting analog color space to digital color space, because you're going to watch it on digital hardware ?
Isn't OBS a screen recorder ?
"Adapting" will only give minute losses, if at all with the Video8 format, color space is wider in de digital domain anyway, my idea is that Davinci Resolve/Studio will resolve that.
