If I plug a VCR into a RCA AV converter to HDMI, and plug that into a Shuttle, will the Shuttle read the video?

This is more mis then hit, you should google for user experiences about this.
Better avoid HDMI at all because you could encounter HDCP which is a copy protection, or HDMI tries to "handshake" but fails in that.
Do you need it for capture or live input ?
Better is to use a "passthrough" device, this can be a VCR with build-in TBC (Time Base Corrector) (a real Pro TBC will be a dumped vintage one, which is expensive)
or a DVD/HDD recorder some of these will have also component (YUV) video output, which is better in some cases then s-video.
Be sure everytime that you use the correct resolution settings (also frame rate and Progressive or Interlaced)
You can be creative when it's about passthrough devices, (like home-cinema sets)
But only few converters will work, these are mostly simple & cheap devices, with a dirty signal output that is just enough for an ordinary tv set/screen.

Thank you for your helpful reply. I have since acquired a Tendak HDMI video converter. The VCR goes into the converter and the HDMI output to my Intensity Shuttle. With a wee bit of tweaking I get excellent picture quality and sound. My childhood is preserved! If you are interested in this converter do not order it from Amazon, instead order it directly from Tendak - a fraction of the price and free shipping.
