Easy fix.
Use an HDMI to SDI converter, instead of an HDMI over cat5 adapter.
The quicker you abandon your cat5 solution and go with SDI the sooner you will get everything working reliably.
there are some cheap HDMI to HD-SDI conerters available. so budget for somewhere between $85 (for a Cheapy)and $400 (for a blackmagic) for a converter, and you will get bulletproof reliability up to almost 100m, using 75ohm coax. (old composite video cable)
