Best product for Hi-8 and Analog tapes?

Looking to convert a ton of tapes from Hi-8 to analog tapes and was thinking of getting an Ultrastudio HD Mini.

Would that work if I send the analog video in? Or is it just best to get some form of Mini DV to firewire track going?

If you want to use analog video out you first need to make the video signal stable with a TBC like device,
You could (cheap) use a dvd-recorder as passthrough, using s-video.
Or have a Digital8 camcorder/player and use Firewire to transfer onto a PC.
Best product ? these are rare, pro multisystem recorders…
Once the video signal is stable, you could also use a converter that does analog to SDI/HDMI and record with a Video Assist, (monitor/recorder)
