Best Color Format for 8mm video capture

I've been experimenting with recording 8mm video to ProRes 422 using OBS.

On the advanced tab there I can select different Color Formats such as i420 and NV12.
Can someone explain which is better for preserving S-video color information and why?

OBS can not record prores, only H264 variants or MKV

Regarding OBS support for ProRes

I am running OBS Studio 29.0.2 on MacOS Ventura.
In Settings->Output->Recording using Type "Custom Output(FFmpeg) and container format mov the folowing video encoders are available:
prores, prores_aw, prores_ks, and prores_videotoolbox.

I am currently using the prores encoder.

Note: With Type set to "Standard" the following encoders are available (but don't output a file and will not stop recording) :
ProRes 422, ProRes 422 LT, ProRes 422 Proxy, and ProRes 422 HQ

From a color space/format perspective i420 and NV12 is exactly the same, just different ways to store the same information.

No matter what prores version you use you will not lose any meaningful information

OBS is screencapture software….. why should you want to use OBS anyway ? for it's eaz of use only ?
How do you capture the audio and video from the Video8 source ? it isn't Hi8 or Digital8 ? is it PAL/SECAM/MESECAM or NTSC ? these are important facts to mention….
(Capture by DV/iLink (if that is what you're using) gives more color loss with NTSC than with PAL they say…)
