The data of the sensors and lenses comes from the manufacturers.

I wonder if you can choose aspect ratios within a given camera choice ?

That's very cool.

I use this tool from Cadrage called F8 on my iOS device. It has an extensive list of cameras and lenses in its database and Cadrage provides updates frequently.

That's definitely a feature to add in the near future. Right now it's not possible.
