Questions about a rig setup

Hey everyone,

I have a question...I find it very time consuming to switch between my camera being on a gimbal to a tripod and wanted to you get your input on what you guys use, what I may be able to use, etc.

Generally the videos I make are for companies so I interview the owner and then walk around with the gimbal and get shots, etc.

I have a BMPCC6K and on my shoots I take my tripod:

and my gimbal which is a Zhiyun Crane 3 Lab.

Because I use a sigma 18-35 lens on the gimbal I had to purchase extra stuff for my cage to mount the camera on to the gimbal with this: https://www.smallrig.com/smallrig-counterweight-mounting-plate-for-zhiyun-crane-3-lab-handheld-stabilizer-bss2402.html I also have a zoom and focus motor on the crane 3 lab which connects to the Sigma lens.

That stuff works fine on the gimbal. Now my problem comes in when I want to remove the camera from the gimbal as I have to remove the focus and zoom motors, unscrew the camera from the baseplate. I recently saw this video on YouTube which blew my mind:
especially at the 6:54 mark where he takes the camera setup he has off of the Easy Rig Minimax and onto the tripod. I would love a setup like that but from what I hear that Easy Rig Minimax does not stabilize shots.

I would really like to get a setup like he has in the video but I am not sure how the shot would be stabilized. I would like to have a monitor on top of my rig, but with the crane it would not fit over the monitor in suitcase mode. Here is my setup:

Any suggestions on how to work like the guy in the video does would be much appreciated. I feel that is the way to go if only the minimax would stabilize the footage.
