Recording off-speed for slo-mo is just a convenience, not a must. You can record regularly at any rate and change it to the target rate in the Clip Attributes and call it a day.
Imagine the project rate as the film projector and the off-speed rate at overcranking or undercranking the camera. In the end, you'll show every single frame, the off-speed frame rate just defines the ratio of slo-mo (or time-lapse).
If you ever decide not to have slo-mo and need such footage with synced sound, it's better to record regular. Off-speed footage will have sync issues.
