Camera App Issue - iPhone SE 2020

I encountered an issue when using the app and I was hoping someone could explain what happened. I am new to using this particular app but I've been using third party apps with various iPhones for twelve years.
I shot with the shutter angle locked, stabilization in cinematic mode using an anamorphic lens. I've read in other posts that there are known issues when the stabilization is in cinematic and extreme modes which is why I mention this. I set the exposure, hit record and the image went from one exposure (usable) to grossly-over exposed. I didn't notice this at the time but the rest of the footage I shot on this day was the same.
My question is does anyone know what setting I might have had on or off, or set incorrectly would cause this issue? It's made me reluctant to use the app since which is a shame as it is quite lovely.
