HDR on youtube is quite a strange thing.
First of all, you need to use the correct codecs. there is a doc by google, that lists all requirements. something like DNxHR and ProRes 4444 is required if I remember correctly.
Secondly, it takes youtube some extra time to actually process the hdr file. You might only see the rec709 trim in the first minutes or sometimes hours. Their tonemappings on the other hand are not really visually pleasing tho.
Also you can only view the HDR version on certain devices. And it makes a difference if you are using the app or a browser.
I did some tests a while ago with my TV and it was quite buggy to actually get the result I wanted.
