You can go up into the Edit -> History -> Open History Window menu, and this will generally show you what you can redo or undo. I believe once you save, it clears the undo history and you can't undo... but in desperation you can go to File -> Revert to Last Saved Version, and sometimes that will get it back. Use caution, because this is a sure way to lose a lot of work if you have no backups.
You kind of have to have a strategy in mind when using keyframes, and there is a kind of logic involved to how you have to structure the specific keyframes and the approach so that it works for the project. Worst case, if I run into problems I might use multiple versions in the event I have to throw the keyframes away and try something different. If it doesn't work, I go back to the previous version and try to smooth it out myself.
