Is there a way of putting a "rear view mirror" shape into videos of dashcam captures - so the main view is ahead as normal but rather than putting a simple view of the rear camera plonked into the edit, do it with an actual "like looking at the mirror in the car" rear view mirror design?

Yes, you can create a graphic image of a rear view mirror with an alpha channel (or use a mask) and insert whatever video you like.
