Customizing Keyboard shortcuts - a little help, pls

Is there a doc or wiki that explains how to use the keyboard customization UI? I've gone through the manual, but I don't see where it goes into detail to describe the workflow -- to answer "How do I use it?", rather than "what does this button do?". Thanks.
Background:
I trying to assign a shortcut to set the color of a clip - pretty basic thing, but for the life of me, I'm lost. DR16 at least listed all of the colors, even though the assignments didn't work. in DR17, the colors are not listed, but if you search for "orange" the option shows up - I can then assign it, and it works!
