Another way to
not use the Color Temp controls in the Camera Raw pallet is to instead do it with a Chromatic Adaptation OFX plug-in. The results are pretty much the same when you set the input color temp and output color temp to whatever you're expecting, like 3200° (warm) to 6500° (normal Rec709). But it should not change from play to stop.
I would also look at the Performance settings and see if it might be using Optimized media behind your back.
