Dragging and dropping from the source viewer to the timeline? Or the media pool to the timeline? Not sure about the latter.
When you hover in the source viewer, you’ll see a video icon and an audio icon appear. You can drag either icon to get video-only or audio-only, respectively.
Unfortunately, this is the only foolproof method I know of to get video only. Un-targeting the audio destination (solid, light grey box around any A#, without an orange outline) works as long as there aren’t extra channels in the source audio, but when there are, Resolve “helpfully” adds extra audio tracks to accommodate the spillover, and it’ll even add the extra tracks if all auto targets are off, everything’s muted, and locked. Annoying.
I’ve even tried marking split edits in the source, without defining an audio range, but in that case, Resolve assumes you want the whole audio, instead of none.

There’s definitely no way to change the audio *source channel* mid-drag and drop, though that would be nice. It’s not very user-friendly to change after the fact when it happens to be wrong, either. The clip attributes audio dialogue doesn’t have waveforms, preview playback, or any way to tell what audio is on which channel. It’s currently a guessing game, and it’s best to set up everything before you start editing, hope the audio guy took good notes, and nobody traded lavalieres at any point.
But if you’re asking more about audio *destination* behavior, you might try disabling “linked move across tracks” and see if that gives you the behavior you expect.
