Parade, Waveform displaying in RGB

I would like to be able to toggle them to one value mode (which displays in black and white, not sure of the actual name of this) but I can't see how to do this.

Uncheck the "Colorize" option in the scopes settings at the top of the scopes panel.

Parade is always gong to be RGB, YRB, that's what Parade means. If you want a composite waveform then select waveform.

You can remove color from the scopes by clicking on the controls and deselecting Colorize, though for the Parade I don't see the value in that.
In the pic Parade is showing YRGB.
