I cant export any higher (like 320kbs) on the studio version.... any ideas?

My Biases:

You NEED training.
You NEED a desktop.
You NEED a calibrated (non-computer) display.

Mine maxes out at the usual 320, both in the options and the actual export. Maybe it's another Windows thing?

Same on my Mac, so it seems like a Windows limitation.
What are the Linux folks seeing?
My disaster protection: export a .drp file to a physically separated storage regularly.

Only up to 192kb here on Win10 too.
Nuendo, WaveLab and iZotope RX6 have no problem exporting to 320kb, so it must be a Resolve thing that can hopefully be fixed.

Could be they have their own libraries, while DR resorts to system capabilities.

Windows only issue, as Audio Only exports on OS X with the Studio version provide a data rate option of up to 768Kb/s for both Quicktime (AAC) and MP4 (AAC).
