I can't find any reference in the documentation to making crossfades in video tracks, but in a search through these forums I find mention of them, although not exactly how to do them. Is there an easy way?

Yes. Look for transitions.

So it's called a crossfade in Fairlight but a cross dissolve in video.

In audio you cross fade from one track or clip to another. In video and film you dissolve from one picture to another, but you fade in and fade out. The terminology comes from way back in analogue days.
