Does the end result matter if I choose timeline 1920 x 1080 HD for editing files recorded in Ultra HD 3840 x 2160 and exporting to 3840 x 2160 Ultra HD?

You can edit and grade at HD but for render, set the timeline back to UHD.

The recommended practice is to perform as much work a possible at reduced timeline resolution. (Proxy mode 1/2 resolution doesn't really do what you might expect...)

Never change aspect ratio without expecting a disaster. Do 1080p to 4k is ok. 1080p to DCI 4k is bad.

I switch back forth between 1080p to 4k all the time, never had issues.

You may want to do keying at delivery resolution(4k).

IMHO, to keep naming clearly separated, 4K should be attributed to DCI, while 16:9 TV is UHD (or HD).
