Well I know on my system which is in SLI mode if you have one of the cards set to be dedicated to PhysX then only 1 shows up in Resolve, if you set the CPU to be used for the PhysX then both cards show up in Resolve and it uses one of them for the Gui. From what I can find Cuda cores are not 'stackable' so combining 2 cards in SLI mode doesn't give you access to double the Cuda cores. The software has to be written to access the cores from 2 cards separately
