Hi, I'm using my Eizo ColorEdge CG318 with my new M1 Mac mini, I created a profile in the screens self calibrating system and the correct profile has been selected in the Mac system preferences but the color is way off. Any ideas?

Playing file from QT X? Why off compared to what ? Way of means what ?
If you calibrated screen to BT.1886 (2.4 gamma) then if you use eg. Resolve with 2.4 gamma project preview should be accurate.

Hi Andrew, thanks for getting back to me, I missed your reply. I hate to ask this because I've been a still photographer using calibrated monitors for 20 years so I should know but.. How do you calibrate to BT.1886? My Eizo has a built in calibration puck so you tell it to go and it just gets on with it. There's no option to change gamma etc. What am I missing?

With video it's more about they way how you preview your files. You need verified path.
With Resolve your easiest option is to buy one of the BM cards and then connect Eizo to BM HDMI and use as full screen video preview. You will need 2nd (cheap) monitor for Resolve GUI.

When calibrating you should have BT.1886 as a preset I assume. Gamma is defined in this spec (so you don't need to choose elsewhere) and it's 2.4 curve based.
