I am not a professional but have been making virtual music videos for my church during covid. I've needed to download many choir members performance videos over the past year and I'm wondering if I can delete these once my final video is rendered. I don't plan to remake any of them.

Under that condition you can. But I'd suggest to first export a high-quality master and not only H.264 or H.265.
You never know which codecs get popular online in the future. Export in ProRes (Mac) or DNxHR or Cineform (PC).
No, an iGPU is not enough, and you can't use HEVC 10 bit 4:2:2 in the free version.
