Recording multiple cameras on virtual machines with OBS

I have multiple cameras that needs to be recorded at our church but I’m only able to record one at a time with OBS, even when opening multiple instances. I have 8 cameras, not all need to be recorded at once, however about 4-5 do at once. I have two decklink duos and was wondering if I could open multiple virtual machines on my PC to run OBS and record different cameras.
Has anyone tried that before? Or have a different way of recording multiple cameras at once with a decklink and pc?
