Actually adding to this after a little preliminary research. Mac with a Thunderbolt to PCIe box probably won't work as it will need to be minimum Thunderbolt 5 to get proper PCI Gen 3 x8 Lane speeds. If a Thunderbolt 5 to PCIe box exists, it's probably more expensive than a PC build.
I imagine I'll need to opt for a Xeon or Threadripper workstation CPU instead of i/Ultra to get enough PCIe lane support due to needing to run a GPU, the Decklink, and some striped NVMe SSDs for storage. GPU @ 16x, Decklink @ 8x, and NVMe PCIe adapter @ 16x = 40 lanes required; much more than the consumer CPU chips typically only supporting 24-28.
From what I gather, Uncompressed 4320p60 will need 5.56GB/s minimum storage speed. So I'll need to stripe at least 2 Samsung Pro 990's on a PCIe 8x or 16x adapter.
But again, curious other users' experience and recommended hardware specs.
