One stupid question: How could I change all R3Ds to Redcolor 3 and RedGamma 3 but not change ISO and color temp for individual clips?

You need to select all the clips you want to change.
They need to be set to Decode Using : Clip, in Camera Raw settings.
After you change the Color Temp for the one clip you have active just use a button on the lower right corner of that panel that says "Apply changes to all selected clips" if you leave the cursor over it.

You can do this in the Media tab or Color tab. In the Media tab you access the RAW settings with a contextual menu.
