VHS output from HDMI is not a good starting point, because of incompatability between devices using this in the first place, it is better to use a
VHS/DVD combo like the Panasonic DMR-ES35V which has a component output and has stabilisation to put video straight into a Intensity Shuttle, one does need a PC or Mac, but harware wise you must be lucky, or spend even more money on devices, I have this Panasonic combo and it works, the Intensity Shuttle gives you also (good) output on the other outputs from it.
But this doesn't solve the other media (8mm video) transfer, or it should be copied to
VHS first

there are also 3rd party devices that capture analog video to DV/Firewire, my Panasonic has also this DV input, don't know yet if this input will be stablized realtime, like the
VHS footage is, if so it would be possible for me to transfer also my Laserdiscs (for my own use) if i wanted to, The Canopus has a mode that defeats the Macrovision protection,
I would use the composite input of my ADVC-100 for that, if that works, i guess the S-video input could be also used for connecting any camcorder.
btw. the Canopus does also work as stand-alone, and could be setup between two or more devices/recorders,
it also has throughput for Lanc edit control by DV.
