The question on sitting between the A7III and the Ninja would be the 8 bit color coming out of that Sony camera. Basically you will be doing all of your color correction using the Ultimatte and what you get into the Ninja would be "baked in". Think of the Ultimatte as a lut

Of course after that you can still bring it all into Resolve and tweak it some more.
You are still recording into your camera and so would have "raw" footage. If there were an issue where the client really did not like the final Ultimatte color then you could composite the raw image in post and then color correct things with much more finesse. However that would take tons of time to do so make sure you get the client signify when filming. On that note it's also good to use a bigger client monitor that your Ninja as well as a monitor that can be calibrated.
