Teranex Thunderbolt Capture Win7pro/64

I have owned a Teranex 2D since 2013. Has been working great on Win7pro/64 running the UltraScope software. However I would now like to capture some good quality VHS tapes, ultimately to MPEG2 or MPEG4 and run on my JRiver Media Server.

How is this best done with the Teranex? What capture software and MPEG conversion would you recommend?

I want to take in composite NTSC and output 480P thus doing the de-interlace inside the Teranex.

Note my VHS deck has a TBC and works flawlessly through the Teranex in real time.
