How do you convert large mp4 file to either mp3 or m4a?

What I mean by large, an mp4 files greater than 1 Gb.

You should add more info about your needing and about your skill on video.
My simple answer should be something like
- a graphics interface to ffmpeg
- a bit of knowledge about video codec to setup correct size // data rate // resolution to optimise quality and size.

If you’re asking how to make large size mp4 files smaller, you can increase compression and reducing the data rate and/or resolution like Carlo mentioned. One tool that can do the task is called Handbrake. It’s open source and you can google for it. You can also then output to a new container like ones you’ve suggested.

and mp3 or m4a are audio only files, which are much smaller anyway?

I have a quick question and no idea where to put this, there isn't an iTunes section or if there I am probably too burned out to find it. I have a music collection that is so large right now, roughly 1500 songs. And I have been thinking about converting all of my mp3 to m4a.

Is it worth the disk space to do so?
I understand that any new songs I get, it would have to be m4as, but what do I do with the existing songs?
Whether finding software online I can download YouTube videos into m4a or should I convert straight from mp3 to m4a within iTunes?

Where are you looking for an "iTunes section"? If in Resolve you will be disappointed. The Fairlight section of Resolve is intended for audio post production of video soundtracks.
As well as Handbrake there is also the free Shutter Encoder for file conversion.
Only you can decide how to handle storage space for existing files. As to conversion, if you can do that directly in iTunes why wouldn't you?
