Are timeline backups overwritten?

I just lost three hours of work because I had overwritten the main file.

When I went to restore timeline backups, it only had 2. The first one was at the start of the three-hour project, and the second one was after I had overwritten everything.

My settings are attached.

I've always found this unintuitive, myself. But there is a good explanation of how these settings actually function in the Setup and Workflow section of the Reference Manual (under Help menu).
My Biases:

You NEED training.
You NEED a desktop.
You NEED a calibrated (non-computer) display.
