I'd say with any camera recording in 8 bit with massive compression, get as close to the look you are aiming for in the camera. You can tweak Sony profiles ad nauseam, find something that appeals to you for the project at hand. There is not much leeway for grading anyway.
If you want freedom in grading, get a camera that's shooting RAW.
My disaster protection: export a .drp file to a physically separated storage regularly.
