What you're trying to do is possible, but you have to break your work out into multiple nodes, which is really how resolve is designed. If you track, window, and grade in a single node then you'll run into this.
The way I work is to break out various functions to different nodes: 1st node for LUTs only, 2nd node for basic balance, 3rd for curves, 4th for grade fine-tuning, 5th and higher for power windows, keys, etc..., and sometimes a final node added after for trimming the clip's grade. So this way I can copy from nodes 2, 3, and/or 4 to get the grade, while not affecting any tracking which would be in node 5 or higher.
If you're trying to copy just certain parameters from one node to another, then sadly that's not possible as you're right, you'll wipe out everything in that node and replace it.
I do wish Resolve had select-able parameters for copy-paste.
